Here we are in the second day with chinese tipical recipes! This is a dish that has little affinity with western tastes but I’m fairly sure you will appreciate it for its special taste and fragrance! Its ingredients and the strenght of their taste is awesome and leaves an absolutely unforgettable aftertaste.
Just similarly to other dishes we made together in the past this one looks difficult and instead what we need is only a little patience and preparation!
Between all the ingredients there is only one I had to buy confectioned and it is the ketchup. There are quite a lot of recipes that are perfectly suitable to make it homemade but, since me and my wife do not use it costantly, it was a too large effort.
Ingredients for 3 people – price:
- 250 gr fresh pineapple – I found a special offer for € 0.88 per kg
- 350 gr chicken breast – € 7.00 per kg
- 1 red pepper medium size – € 2.00 per kg (one piece weights approximately 150 gr)
- 1 leek – € 0.50
- 1 teaspoon of maizena
- 1 glass of dry white wine
- 1 espresso cup of dry white wine
- 1 espresso cup of ketchup – € 1.50 per box of 250 ml
- 1 espresso cup of soy sauce
- 1 tablespoon of brown sugar
- 3 tablespoons of seeds oil
As always with this kind of dishes we start preparing all the ingredients prior the cooking.
We wash the red pepper, we cut it in 3 cm side squares after taking off seeds and the white parts. We cut the fresh pineapple in 3 cm side squares: my siggestion is to peel it first, then slice it and finally cut in squares leaving out the central hard part. We cut in thin circles the leek. we cut the chicken breast in 3 cm sides cubes and we let it marinate for 30 minutes in a bowl with white wine and a pinch of salt. The best choice is to cut the same number of pieces of pepper, chicken and pineapple.
In a little casserole we pour together the espresso cups of wine, soy, sugar and ketchup. We let it barely boil for 15 minutes mixing often.
We take our wok or a pan with high sides (even a caserole can be used but take care of mixing well during the cooking time) and we put in the oil. We pan fry the chicken for 2 minutes and then we put it on a side. We panfry in the same oil the leek for 2 minutes and then we put it with the chicken. We pan fry together pineapple and red pepper for 3 minutes always at high heat. We add then the leek, the chicken and the maizena. We mix well till it is not anymore in lumps and then we add the sweet and sour sauce we made before and half a glass of water. We let it cook till the sauce is well dense!
