Milky Cake with Wild Berries


Morning everyone!

These days are the perfect occasion to eat a lot of ice cream! I took this occasion to cook something special for my wife! The inspiration arrived from a tv program called the Menus of Benedetta. It is an interesting cooking transmission that has the staple rule of cooking things that are available in every family kitchen!

It is the same reason I opened this blog for: cooking at home is not only the occasion of getting nutrition but to unite the family putting delicious dishes on the table, all using our every day shopping at the nearest market, sometimes using ingredients that are quite far form the perfection we could hope for. It is true that the “real cousine” is created from extremely high quality ingredients (which does not mean they are all costly) and a very good tecnique. I am far from the skills of a chef and in a family kitchen is difficult to keep track with all the food needed to cook like in a restaurant. Giving emotions through cooking is something that can be done without beeing great chefs either. We need a great passion, the capability of putting everything on the line and, most of all, the humilty of admitting the mistakes!

Beeing chef needs also a committment out of the ordinary jobs and it rarely fits into a normal family living: it is a big responsibility, a huge chance of beeing creative and it needs a huge disposition to sacrifice yourself. We all must paying our respects to all the chefs and, in my little world, I try to do it using the best ingredients my wallet can bear and trying always to give out emotions to my dearests.

Ingredients for 12 people:

  • 6 bisquits Digestive McVities
  • 700 grof milk flavour ice cream
  • 3 tablespoons of wild berries
  • 2 tablespoons of brown sugar
  • 200 ml water
  • 3 tablespoons of chocolate drops

This dessert is very easy and the main ingredient is also the most important one: time!

For the first time i also used some marvellous moulds that have an opening on the bottom that help out to take out the dessert from it.

We start with the wild berries: since it is a laered dessert we start constructing it from the top to the bottom! We take our frozen wild berries (I bought them in 1kg boxes in the market) and put them into a casserole with the water and sugar. We let them boil for about 15 minutes, the time needed to let the water reduce to a dense sauce. When done we let it cool a bit, then we pour a thin layer in the moulds and let them solidify in the freezer for 2 hours.

When they are well solid, we take our milk flavoured ice cream and let it melt till it is mixable. At this point we add the chocolate chips and mix well. We then add it into the moulds leaving the last cm for the bisquit layer. It has to solidify for at least 3 hours.

As last we prepare the base of the dessert: We take the bisquits and cruch them very finely. We add the melted butter, we can melt it in the microwave for one and a half minute at 350w, and we mix it in the bisquits with a fork. We take our moulds and add the final layer, pressing it gently but firmly wth a tablespoon. We let the dessert cool for 1 hour more.

A great dessert that resembles the cheesecake. Mind that the solidifying time is the most important ingredient or we may end with a melt dessert!

The payoff is an amazing dessert with a multilayered taste!

HOW MUCH IS IT? The cost per portion is really depending on how much we spend on wild berries and icecream: the price should be around € 0.50!
